Reipe Exchange

Hello all!

Now that we have had a couple weeks under our belt- what is something that you have started making that is so good, you can't even see straight, and it just so happens to be healthy too! 

Something I tried, which was SUPER easy...
3 Egg whites- lil milk- scrambled
chopped up green, red, peppers (mixed in with eggs)
2 pieces of wheat toast w/pb YUMMY breakfast. 

Egg whites have 13 calories (39 calories +almost 10 grams of protein with the peppers)
2 slices Toast: 140 calories & 4 grams of protein
PB: 2 TBSPN: 190 calories (UGH!) BUT, 7 grams of protein
Total: 370 calories & 21 grams of protein! (Good for me as I don't eat meat!)

  1. I try to have a salad every day for lunch. I do the majority of my shopping at Aldi's and they have a fabulous selection of healthy food and snacks options. I buy a bag of mixed salad, usually the "spring mix." I also buy salmon burgers there.

    To prepare the salad, I grill the salmon on the stove in a tbsp of olive oil. It takes about 2 1/2 min on each side on med hi heat. When I take it out of the pan, I put it on paper towels and dab it to soak up some of the oil. As it cools, I prepare my salad with mixed greens, craisins, low fat feta cheese and a sprinkle of slivered almonds. Then I cut up the salmon into small chunks and put it on top of the salad. Give it a good mix and the salmon and other toppings provide so much flavor that I forgo any dressing. Sometimes I even put in diced apples or mandarin oranges for a little more punch. I love this salad and I hope you will enjoy it too. It contains fruits, vegetables, dairy, protein and healthy fats. Can it get any better than that? :)

    Also, try the "Laughing Cow" products for a snack. I love the light swiss cheese triangles on a wheat thin. Mmmmmm. Tasty!
