Topic Tuesday

Well; hello there!  How are you??

So, I'm needing your help with today's topic.  As many of you know; I hurt my knee as I've been training for my half marathon...which is on May 16th (12 days and counting).  So, this week, I need to the swelling (size of a melon now down to an egg) down...which means; NO working out & rest, ice, tylenol, elevation; baby my knee!  Which means...this week for weight loss, I really need to focus on what I eat; which I find is the hardest part! I can run for miles to burn off a blizzard...but now I can't!  Sooooo....I can write down what I eat to be aware- but I'm too lazy;or well; am lacking that desire...so, I'm asking you for help- any easy-to-make meals that are filled with fiber and protein (I'm a meat hater) that you can share with me and the group?!?!  HELP!!!

  1. Lynsey...I have had this wonderful little wrap that I just love to death. I know you will also enjoy it and for you I will even add in some tomatos. They sell these lovely wraps called "flat outs". They have them in different flavors like sun dried tomato. The wrap themselves have at least 9 grams of protein in them and they also have lots of fiber (but since they are not in front of me right now I can't quote how much). Anways here is what i do...

    Take the wrap, microwave it for like 20 seconds. Put on some hummus (usually sun dried tomato hummus) then I add the combined below mixture.

    Blackened corn
    Black beans
    Red Onion
    Cilantro
    Tomoatos (this is added for you)
    Mix all that together with some lime juice and you have a great little salsa spread

    I add this mixture the wrap and hummus. It is so good!!!

  2. I have a wonderful recipe that I LOVE! It's so refreshing with summer coming...although it doesn't appear to be getting here anytime soon based on the weather this past week.

    Black Bean, Mango and Tomato Salad:
    1 large mango, diced and divided
    3 Tbsp fresh lime juice
    3 Tbsp water
    2 Tbsp olive oil
    1/2 tsp ground cumin
    1/2 tsp table salt
    15 oz canned black beans, drained and rinsed
    1 cup diced tomatoes
    1/2 c diced sweet onion
    1/4 c fresh minto or cilantro cut into thin slivers

    In a large bowl, mash 1/4 C diced mango with a fork; whisk in lime juice, water, oil, cumin and salt.

    Add remaining ingredients in a bowl, toss to mix and coat. Serve immediately or cover and refrigerate up to 1 day. Makes 8 1/2 C Servings
